Katana-Moulin is part of the "Uniques from Tradition" series, which comprises a small assortment of knives with a distinctive history, shape, and traditional craftsmanship. Katana-Moulin translates as "mill sword," a word and product creation that stems from the Herder family's interaction with Japanese knife craftsmanship.
In Japan, there are many knife shapes with long blades designed for carving various large fish. The delicacy and, at the same time, immense sharpness of these knives is surprising, the shape of the blades perfectly suited to their function. This is also the case with the tuna knife "Shinomune," which provided the inspiration for this ham and meat knife. The "Shinomune" looks very similar to the Japanese swords, the "Katana" - hence the name - and, like a sword, it also carves tuna. The elegant, slightly curved blade of the Katana-Moulin is made of first-class stainless steel and is finely ground and blue-polished. It is ground to be slightly elastic, making it particularly suitable for carving ham or salmon.
The handle is made of plum wood. Plum wood is hard, gnarled, and often interspersed with knots. It is very densely grown and extremely durable. Its beautiful, richly nuanced color grain ranges from light brown-pink to dark brown-violet. A wood of exceptional character, beauty, and high practical value.
