K-Series Plum Carbon
The new K-series chef's knives in the carbon steel version are characterized by a very high hardness of up to 61.5 HRC (Rockwell hardness C). The high carbon content contributes to the high hardness and thus to the excellent sharpness of the blades. Carbon steel blades are not rustproof and require regular care. The CARBON STEEL blades are made of an exceptionally high-quality non-stainless steel with a carbon content of at least 1%. This allows Robert Herder to achieve a much higher hardness of 60/61.5 HRC (Rockwell hardness) in these Windmühle knives compared to approximately 57/58 HRC for their standard carbon steel knives. This hardness gives the blade greater sharpness and an even longer edge retention.
The knife blades are ground using the "Kesselschen Walkschliff" (Kessel's Walk grind), a special form of the Solingen thin grind. Blades crafted with this grind, thanks to their geometry, exhibit exceptional stability despite the very fine thin grind. Naturally, the blades are traditionally blue-polished by hand. The handles are characterized by their oval, curved shape and the resulting balance, and the materials used, such as local natural woods and soft-touch synthetics, provide a pleasant feel. The shape is a continuation of our successful K design, which was first implemented in 2003 on the Grandmoulin bread knife.
The wood of the plum tree is hard, gnarled, and often interspersed with knots. It is very densely grown and extremely durable. Its beautiful, richly nuanced color grain ranges from light brown-pink to dark brown-violet. A wood of exceptional character, beauty, and high utility value.
