There are certain elements that are indispensable in the history of Windmühlen knives. These include, above all, two types of knives that are inextricably linked to the success and development of the Windmühlenmesser manufactory: the time-tested "Classic" vegetable knife and the "Buckels" utility knife. From its beginnings in 1872 to today, they represent the foundation of Windmühlen's success and core values: high-quality, functional, and extremely sharp knives for everyday use. Naturally, all handcrafted.
In the search for knives that reflect precisely this, the team rummaged through the extensive pattern archive with countless blade and handle styles, uncovering shapes that are unusual for today's world. Using these as a template, a new edition of the classic and the Buckels was developed, reminiscent of the old patterns while adapting its form and functionality to modern needs.
