Santoku is a Japanese all-purpose kitchen knife. Santoku means "three virtues" because it is suitable for preparing vegetables, fish, and meat. It is primarily used for pressure cutting. The blade features ridges, ground indentations that prevent sticky, greasy, or thin food from sticking to the knife.
The blades are hand-forged and made from a single piece of chrome-vanadium-molybdenum knife steel. Further processing involves over 40 manual steps. The handle scales are made of select olive wood that's up to 500 years old. This wood is very hard, weather-resistant, and has a strong grain, making it particularly elegant. The blade is rust-proof, ice-hardened, and hand-sharpened. The handle is not dishwasher-safe.
